Anyone running X on their VPS? I'm thinking of suggesting a bunch of networking students get VPSs and get some real hands-on experience, but they are not necessarily linux gurus and I'm concerned about just dumping them onto the console.

Have you tried our Xen-based Ubuntu 8.10 FreeNX Beta ..?

FreeNX differs from a standard VNC setup, (the NoMachine client is used) however, your students would have full access to remote machines running GNOME with the option to delve into BASH if they feel so inclined.
